Le texte des allergenes lu par le client dans la fenetre allergenes de la borne etait sans accents sur les 14 allergenes (noms et descriptions). Meme defaut sur des noms de produits, des noms d ingredients et l unite de stock.
Deux vecteurs : les seeds pour une installation neuve, la migration 0016 pour une base deja en place (garde par la valeur non accentuee d origine, donc un renommage fait depuis le back-office n est pas ecrase).
La verification compare le nom relu cote PHP : la collation utf8mb4_unicode_ci ignore les accents, une egalite SQL passerait au vert sur la ligne fautive.
Tests : 1453 PHP (4198 assertions), 329 JS, PHPStan niveau 6 propre.
The allergen text a customer reads in the kiosk allergen dialog was stored without accents ("Cereales", "Oeufs", "Graines de sesame", "superieure") for all 14 INCO allergens, names and descriptions alike. Product names, ingredient names and the stock unit carried the same defect. Two vehicles, because a seed file is tracked by name and never replayed on an existing install: the seeds carry the accented text for a fresh install, and migration 0016 updates the rows already in place, guarded by the unaccented original so a rename made from the back-office is never overwritten. Verification compares the name read back in PHP, not in SQL: the utf8mb4_unicode_ci collation ignores accents, so a SQL equality check would pass on the uncorrected row. Out of scope on purpose: "Sunday" and the missing apostrophe in "Ptit Wrap" are the school source spelling, not accent defects.
